Recipe: Sweet Potato & Chicken Curry

I was in the mood for something sweet, so decided to make a sweet curry dish and it turned out really well. The amount below fed 2 hungry people as a main dish, but it could be stretched to 3. While I give exact measurements here, they're never as fun as just winging it, so modify to your hearts content. Here it is!

Serves 2-3

Ingredients

1 1/2 tsp Garam Masala
2 tsp Tumeric
1 Apple (chopped)
1 Medium Onion (sliced very thin)
3+ Chile Peppers (the more the better!)
2 Sweet Potatoes (white flesh/purple skin)
4 cloves Garlic (minced)
2 large Chicken Breasts (cut into small pieces)
2 tbsp Olive Oil

Directions
Go get a decent sized pot with a lid and keep it covered throughout. Pour the olive oil in the pot and let it warm up on a medium-high heat (olive oil has a low boiling temp, so be careful). Drop onions and chile peppers in the pot and cook a couple of minutes until it gets soft, then dump in the garlic and apples. Cook them a few more minutes, careful not to let the garlic burn. Dump in the garam masala and tumeric and cook for about 5 minutes to let the spices get their flavour out a bit. After, put in the chicken pieces and cook it until the outside looks done ("browned"). Now you add in the sweet potato, turn the stove down a bit, and let it cook for around 30 minutes, stirring occasionally. Add salt to taste and enjoy =]

Garam Masala

I make my own garam masala (so many store bought ones taste like shit). I listed what I put in the one tonight below. Garam masala is really just what you like, so toss whatever spices you want into it. Some people like to put dried garlic and ginger in, but if I'm using either of those I prefer it fresh. I also like whole seeds better and only make a small amount at a time, that way it's nice and fresh.

Ingredients

1 1/4 tsp Ground Cinnamon
1 tsp Coriander Seeds
1 tsp Carraway Seeds
1 tsp Cardomom Seeds (if they're the green pods, peel the shell off and measure 1 tsp of seeds)
3/4 tsp Ground Black Pepper
1/2 tsp Mustard Seeds
1/2 tsp Ground Cumin

Directions
Put em in a zip lock bag, spread it on a counter, then smash the seeds w/ something hard.
